Did I Miss the Amonia spike?

An interesting conversation from the forum. Have you ever missed the initial Ammonia spike?

"I set up a new tank and then ascended the vertical learning curve related to Nitrification. The tank setup is 6 days old today and I'm getting some interesting results.There has been no Amonia spike to speak of, Amonia levels never went higher than 0.1 mg/l (ppm).

Nitrite levels have, however, risen sharply. From 0 to 0.3 mg/l on day 4 to to 0.8 mg/l last night. At this point some fish were showing classic symptoms of Nitrite related discomfort (red gills, listlessness). So I conducted a 25% water change immediately which sorted things out.

Throughout all of this there has yet to be an Amonia spike. Levels are still hovering around 0.1 mg/l. Have I missed this part of the cycle? Isn't it only supposed to start kicking in after day 3?
